normal text in math mode:
\text{...} works in amsmath package, not in standard latex.
For standard latex, you could use
\[
difficulty \quad \textit{difficulty} \quad \textrm{difficulty}
\mbox{difficulty}\quad \mathrm{difficulty} \quad \mathit{difficulty}
\]
and many more with other font families.
Standard latex works in all packages.
